Rajma chawal is a favorite combo in many North Indian households. Rajma is comfort food at its best. I like rajma best with simple jeera (cumin) rice. You can have Rajma using 17 ingredients and 11 steps. Here is how you cook that.
Ingredients of Rajma
- Prepare 2 cup of rajma soaked overnight. ( I have taken the smaller ones).
- You need 3 of medium onions chopped.
- You need 3 of big tomatoes pureed.
- You need 3-4 of green chillies.
- Prepare 2 inch of ginger.
- Prepare 5-6 of garlic cloves.
- Prepare 1 of star anis.
- Prepare 2 of tej patta/ bay leaf.
- Prepare 5-6 of cloves.
- You need 5-6 of pepper cons.
- It's to taste of Salt.
- It's 1 tsp of turmeric powder.
- It's 2 tbsp of kashmiri red chillie powder.
- Prepare 1 tbsp of dhaniya jeera( Coriander cumin) powder.
- It's 1 tsp of kitchen king/ garam masala.
- Prepare 1 tsp of amchur( Dry mango) powder/lemon juice.
- Prepare 1 pinch of Kasturi methi.
Of course, some roti would be great too. When I was in college, I ate rajma at least once a week. Rajma Masala is a very popular dish in the Northern states of India. The Punjabi way of cooking Rajma Masala is to soak it overnight in water, boil it using a pressure cooker and mix bhuna masala made with chopped onions, pureed tomato, ginger, garlic and milieu of fresh spices including cumin, coriander and chilli powder.
Rajma step by step
- Wash the soaked rajma nicely in running water and put it in pressure cooker..
- Add 3-4 cups water,salt to taste and keep on flame. Let it cook for 3 -4 whistles on medium flame..
- In a heavy bottomed pan/ kadai, add oil,tej patta, a cinnamon sticks and black pepper, saute it for a while..
- Add onions and cook till they are soft and golden..
- Now, add ginger, garlic, green chillies crushed or paste as per your convenience..
- Saute it for a while, till the raw fragrence goes away..
- Now, add tomatoes puree. And all the masalas. Cook till everything comes together! Like a thick paste..
- Now,add boiled rajma. Add it's broth to adjust the consistency..
- Add salt, chat masala and kasuri methi..
- Cook on medium flame for about 10 mins. Till the gravy turns thick !.
- Enjoy it with plain rice..
