This is a lightly spiced, creamy and a delicious punjabi rajma masala curry recipe. this is my mom's way of making this famous punjabi masala curry. rajma masala is a weekly affair at home and a sunday lunch. so i make rajma masala in three different ways. Rajma Rajma chawal is a favorite combo in many North Indian households. Rajma is comfort food at its best. I like rajma best with simple jeera (cumin) rice. You can have Rajma using 17 ingredients and 11 steps. Here is how you cook that.

Ingredients of Rajma

  1. Prepare 2 cup of rajma soaked overnight. ( I have taken the smaller ones).
  2. You need 3 of medium onions chopped.
  3. You need 3 of big tomatoes pureed.
  4. You need 3-4 of green chillies.
  5. Prepare 2 inch of ginger.
  6. Prepare 5-6 of garlic cloves.
  7. Prepare 1 of star anis.
  8. Prepare 2 of tej patta/ bay leaf.
  9. Prepare 5-6 of cloves.
  10. You need 5-6 of pepper cons.
  11. It's to taste of Salt.
  12. It's 1 tsp of turmeric powder.
  13. It's 2 tbsp of kashmiri red chillie powder.
  14. Prepare 1 tbsp of dhaniya jeera( Coriander cumin) powder.
  15. It's 1 tsp of kitchen king/ garam masala.
  16. Prepare 1 tsp of amchur( Dry mango) powder/lemon juice.
  17. Prepare 1 pinch of Kasturi methi.

Of course, some roti would be great too. When I was in college, I ate rajma at least once a week. Rajma Masala is a very popular dish in the Northern states of India. The Punjabi way of cooking Rajma Masala is to soak it overnight in water, boil it using a pressure cooker and mix bhuna masala made with chopped onions, pureed tomato, ginger, garlic and milieu of fresh spices including cumin, coriander and chilli powder.

Rajma step by step

  1. Wash the soaked rajma nicely in running water and put it in pressure cooker..
  2. Add 3-4 cups water,salt to taste and keep on flame. Let it cook for 3 -4 whistles on medium flame..
  3. In a heavy bottomed pan/ kadai, add oil,tej patta, a cinnamon sticks and black pepper, saute it for a while..
  4. Add onions and cook till they are soft and golden..
  5. Now, add ginger, garlic, green chillies crushed or paste as per your convenience..
  6. Saute it for a while, till the raw fragrence goes away..
  7. Now, add tomatoes puree. And all the masalas. Cook till everything comes together! Like a thick paste..
  8. Now,add boiled rajma. Add it's broth to adjust the consistency..
  9. Add salt, chat masala and kasuri methi..
  10. Cook on medium flame for about 10 mins. Till the gravy turns thick !.
  11. Enjoy it with plain rice..

Rajma dal is a red kidney bean curry that is a popular dish in northern India, though it's enjoyed throughout the country.
