This is a lightly spiced, creamy and a delicious punjabi rajma masala curry recipe. this is my mom's way of making this famous punjabi masala curry. rajma masala is a weekly affair at home and a sunday lunch. so i make rajma masala in three different ways. Ingredients of Rajma

  1. Prepare 1 cup of Rajma(kidney beans).
  2. Prepare 3-4 of Tomato.
  3. Prepare 2 of green chilli.
  4. You need 1 inch of ginger.
  5. Prepare 1 teaspoon of turmeric powder.
  6. It's 1 teaspoon of red chilli powder.
  7. Prepare 2 teaspoon of coriander powder.
  8. Prepare 2 teaspoon of mango powder.
  9. You need 2 teaspoon of Everest rajma masala.
  10. You need 1/2 teaspoon of garam masala.
  11. Prepare 1/2 teaspoon of Black salt.
  12. Prepare To taste of Salt.
  13. Prepare 1 teaspoon of Cumin seeds.
  14. Prepare 1 of Dry red chilli.
  15. It's 1 of Tej patta( bay leaf).
  16. Prepare 2 of cloves.
  17. It's 2 pinch of Hing/asafoetida.
  18. It's 1 tablespoon of ghee.
  19. It's as needed of Water.
  20. Prepare As needed of Coriander leaves.

Of course, some roti would be great too. When I was in college, I ate rajma at least once a week. Rajma Masala is a very popular dish in the Northern states of India. The Punjabi way of cooking Rajma Masala is to soak it overnight in water, boil it using a pressure cooker and mix bhuna masala made with chopped onions, pureed tomato, ginger, garlic and milieu of fresh spices including cumin, coriander and chilli powder.

Rajma step by step

  1. Soak 1 cup rajma (kidney beans) in enough water overnight or for 8 to 9 hours. (Ya soak 4 to 5 hour in hot water.).
  2. After 8 to 9 hour drain all water and wash again.
  3. Heat pressure cooker add rajma Cook until for soft 5 to 6 whistle on a medium heat and rajma must be soft when cooked not and if rajma aldente or is hard, then cooked for 2 more whistle..
  4. How to make gravy of rajma -take a pan add 2 spoon ghee then add cumin seeds, tej patta, clove, hing, dry red chilli and let the colour into turn golden..
  5. Then add ginger chilli paste and tomato paste put all masala like turmeric, red chilli, garam masala, coriander, amchur, rajma masala etc and cook..
  6. Cook till ghee start to leave and moisture is evaporated..
  7. After add rajma and 2 to 3 cup of water and normal salt,black salt..
  8. Boiled 15 to 20 mint, Garnish coriander leaves. And serve with rice ya pulav.
