Ingredients of Rajma
- It's 1 cup of Rajma(kidney beans).
- It's 1 of medium size sliced onion.
- Prepare 2 of medium size sliced tomatoes.
- You need 1 tbsp of chopped coriander leaves.
- It's 1 pinch of hing/asafoetida.
- You need 1 tsp of cumin seeds.
- Prepare 1/2 tsp of turmeric powder.
- You need 1 tsp of coriander powder.
- You need 2 tsp of kashmiri red chilli powder.
- It's 1 tsp of Garam masala.
- Prepare 1 tsp of ginger garlic paste.
- You need 1 of black cardamom.
- Prepare 1 inch of cinnamon.
- It's 1 of Bay leaf.
- It's 4 tbsp of oil.
- It's 4 cup of water.
- It's to taste of salt.

The Punjabi way of cooking Rajma Masala is to soak it overnight in water, boil it using a pressure cooker and mix bhuna masala made with chopped onions, pureed tomato, ginger, garlic and milieu of fresh spices including cumin, coriander and chilli powder.
Rajma instructions
- Wash rajma and soaked overnight..
- Wash twice and then pressure cook rajma with 4 cups water. Add salt to taste, cinnamon, cardamom and bayleaf. Pressure cook for 4 to 5 whistles. Check if done, else give 2 to 3 whistles more..
- Heat 2 tbsp oil in a pan, add hing, cumin seeds when crackles, add onion. Saute for one minute..
- Add ginger garlic paste, mix well. Saute for few seconds.Add tomatoes,mix well. Cover lid and cook for 2 to 3 minutes on low flame. open the lid, let it cool down..
- Blend into a puree. Heat 2 tbsp oil in a pan, add kashmiri red chilli powder, keep the flame low, add the puree. Mix well, add turmeric powder, coriander powder, salt if needed. Mix well..
- Cover lid and cook for 5 minutes, add boiled rajma, water mix well..
- Cover and cook on high flame for 5 minutes. Open lid and mix well. Add chopped coriander leaves, garam masala, mix well. Delicious Rajma is ready is ready to serve. Enjoy!!!.
