This is a lightly spiced, creamy and a delicious punjabi rajma masala curry recipe. this is my mom's way of making this famous punjabi masala curry. rajma masala is a weekly affair at home and a sunday lunch. so i make rajma masala in three different ways. Rajma Rajma chawal is a favorite combo in many North Indian households. Rajma is comfort food at its best. I like rajma best with simple jeera (cumin) rice. You can have Rajma using 18 ingredients and 6 steps. Here is how you cook it.

Ingredients of Rajma

  1. It's 1 cup of Rajma(kidney beans).
  2. You need 4 of garlic cloves.
  3. Prepare 3 of Elaichi (cardamom) pods.
  4. Prepare of For the masala.
  5. You need 2 of Tomato.
  6. You need 2 of Onion finely chopped.
  7. Prepare 3 tsp of Ginger garlic and greenchilli paste.
  8. It's 3/4 tsp of Garam masala powder.
  9. You need 1 tsp of Red chilli powder.
  10. You need 1/2 tsp of Turmeric powder.
  11. Prepare To taste of Salt.
  12. Prepare 2 tbsp of Coriander powder.
  13. You need 1 of Bay leaf.
  14. You need 2 inch of Cinnamon stick.
  15. Prepare 1 tsp of Coriander leaves.
  16. You need 1 tsp of Lemon juice.
  17. You need 2 tsp of Oil.
  18. It's 1 tsp of Ghee.

Of course, some roti would be great too. When I was in college, I ate rajma at least once a week. Rajma Masala is a very popular dish in the Northern states of India. The Punjabi way of cooking Rajma Masala is to soak it overnight in water, boil it using a pressure cooker and mix bhuna masala made with chopped onions, pureed tomato, ginger, garlic and milieu of fresh spices including cumin, coriander and chilli powder.

Rajma step by step

  1. Soak rajma for 12 hours.wash and drain and pressure cook adding water+elaichi+garlic cloves for 6 whistles (depends on the quality of the rajma).
  2. Take the tomatoes and blend them in a mixie.
  3. Heat a pan add Bay leaf+ cinnamon when aromat add onions and fry till pinkish colour later add blended tomato paste and cook till it the gravy thickens and reduces a bit add all the dry masala and saute nicely till it changes it's colour to darker shade and it's dry..it's should not get burnt....
  4. Now add dis masala to the cooked rajma and mix,add salt add some coriander leaves.mash some of the rajma using a ladle and put the lid of the pressure cooker and pressure cook for 2 more whistles.
  5. When pressure releases add 1tbsp lemon juice and mix finally pour a tsp of ghee.... Garnish with coriander leaves.
  6. Best served with rice and curd.

Rajma dal is a red kidney bean curry that is a popular dish in northern India, though it's enjoyed throughout the country.
