Ingredients of Rajma

  1. Prepare 1/2 cup of Rajma(kidney beans).
  2. You need 1 cup of tomato puree.
  3. You need 1 of onion.
  4. You need 1 tsp of ginger garlic paste.
  5. Prepare 1 tsp of red chilli powder.
  6. You need 1/2 tsp of turmeric powder.
  7. You need 1 tsp of coriander seed powder.
  8. Prepare 1/2 tsp of cumin seed powder.
  9. You need 1/4 tsp of garam masala.
  10. You need 2 tbs of oil.
  11. You need 1/4 tsp of cumin seeds.
  12. You need Pinch of asafoetida.
  13. It's 1 tsp of kasturi methi.
  14. It's 1 tsp of lemon juice (optional).
  15. It's 1 tsp of salt.

Of course, some roti would be great too. When I was in college, I ate rajma at least once a week. Rajma Masala is a very popular dish in the Northern states of India. The Punjabi way of cooking Rajma Masala is to soak it overnight in water, boil it using a pressure cooker and mix bhuna masala made with chopped onions, pureed tomato, ginger, garlic and milieu of fresh spices including cumin, coriander and chilli powder.

Rajma instructions

  1. Soak the kidney beans overnight. Drain and wash with fresh water. Put it in pressure cooker with sufficient amount of water. Add salt and pinch of baking soda..
  2. Heat on medium flame for 1 whistle. Then reduced the flame to low. Cook for 7 to 8 minutes. Switch off the gas..
  3. Meanwhile heat the oil in a pan on low flame. Add cumin seeds, asafoetida, turmeric powder and sauté. Add finely chopped onion add ginger garlic paste. Fry well..
  4. Now add tomato purée. Cover and cook for 5 minutes till the oil is separated. Further add red chilli powder, coriander seed powder, cumin seed powder and garam masala and sauté..
  5. Add kasuri methi and stir well. Now add cooked rajma and mix all ingredients together well. Cover and cook for 10 to 15 minutes till the curry thick..
  6. Serve hot rajma with rice or chapati..
